Why Wagyu From Georgia Mountain Wagyu?
Why should you try our Wagyu?
Wagyu are a breed cattle that originated in Japan. It is better known as Kobe Beef, but that precise term is reserved for Wagyu originating in the Kobe Prefecture of Japan. But genetically, our Wagyu are nearly identical (99%+ or 100%) to Japanese Kobe Beef. Beware of supermarkets or websites selling “Wagyu” or “Kobe” beef, they are usually beef from a genetic cross of Wagyu and Angus and of inferior quality. Ask for Pureblood (93.75% Wagyu) or Full Blood Wagyu (100% genetically traceable to Japanese parentage).
- Incredible Taste and Tenderness. Wagyu simply tastes much better than any other beef type. The taste and tenderness of the Wagyu beef comes from the high degree of marbling, which are the fine lines of fat in the beef. USDA “Prime” beef, usually reserved for high end restaurants, is judged on the extent of marbling. Wagyu marbling exceeds USDA Prime guidelines. Properly cooked steaks and roasts can be cut with just a fork. Hamburgers are incredibly juicy.
- It’s Healthy. The fat marbling in Wagyu is not like that in other beef. It has a high degree of Omega 3 and 6 fats, with very low amounts of saturated fats and cholesterol. The fat profile is very similar to salmon. And it’s the fat entrained in the beef that makes it so tasty, juicy and tender. So eat your beef guilt-free!
- Our Wagyu are Pasture-Raised. From birth to harvesting, our cattle enjoy ample grassed pastureland, trees for shade, and spring fed streams originating in the National Forest bordering the ranch. We believe that when God gave mankind dominion over the animals, He intended they be treated in a humane manner. We give our cattle no growth hormones, nor antibiotics in their feed.
- No Wagyu Before Its Time. Wagyu are born incredibly small, about the size of a border collie. And unlike other cattle types, they grow slowly. Typical supermarket beef cattle are bought at 6 months of age and placed in crowded “feed lots”, where they are continuously fed corn to promote fast growth, then slaughtered at 18 months of age. For proper development of the marbling, Wagyu must reach a minimum age of 28 months. Slow growth and a longer time to maturity costs us more, but the end result is worth it!
- You KNOW Where Your Beef Comes From. All of our beef are raised on our North Georgia farm, from conception to harvest. Approximately 20% of all beef sold in the USA is imported, over 2.5 BILLION pounds this year alone. Beef imports from Brazil are up 73% so far this year (2022).
When we harvest the beef, it goes to a Dawsonville, GA facility where it is processed under USDA inspection. All of our beef packages bear the USDA seal.
We are accepting pre-orders for quarters and hanging halves that will be available in starting February 2023 with weight determined by the processing facility. You will work with the processor to determine the cuts/weights/thicknesses you want and pay his fees. Quarters are a bit more complicated, so call us to discuss. A non-refundable $500 deposit is due upon placing order, the balance due when hanging weight is determined,.
We make almost weekly runs down the GA400 corridor to Alpharetta and have a distribution point in Woodstock for your convenience. Pickup at the Suches, GA farm is available and a great chance to see our small family operation.
