Ah, the Delmonico steak! Often underappreciated and misunderstood. The Delmonico (aka Chuck Eye Steak) is cut from the center of the chuck, just in front of the Rib Eye. Sometimes referred to as “The Poor Man’s Ribeye”, this steak has a reputation as being a little tougher than the ribeye. But this is not everyday beef, this is Wagyu, and tenderness is a trait inherited by the Delmonico! This steak also has the beefy flavor characteristics of the chuck. So you get more flavor than the ribeye and a very tender Wagyu steak at a lower price point than the Rib Eye steak. And LOOK at that marbling! Tenderness is guaranteed.
